Spinach, Beet, Feta & Toasted Nut Salad with Raspberry Vinaigrette

This fresh and light-tasting salad is nutritious. When you add the home-made raspberry vinaigrette dressing it becomes delicious. Even non-beet lovers tell me they enjoy this blend of flavors.

Delicious, Nutritious Protein Pancakes

I don't remember exactly where I found this recipe, but it was on some internet athletic-oriented web site.

I've made them several times and they're becoming a favorite of mine. When you look at the recipe you'll see how I've modified it for a single large pancake - that is enough for me.

Moist and healthy All-Bran Muffins

These delicious mini-cakes are made with bran cereal, fruit and honey. High in fiber and low in fat, they'll make a nice addition to your daily diet.

All-American Apple Pie

Apple pie does not get better than this. Reducing and concentrating the juices of the apples makes it necessary to use only about half the usual amount of thickener, resulting in a more pure apple flavor, a juicy filling, and a crisp bottom crust.

Banana Bread & Healthy Egg substitute

The wonderful thing about sharing recipes - the more good recipes we share, the better we all get to eat!

Included with this banana bread recipe is a flaxseed (linseed) mixture that is a very healthy substitute for egg. Instead of artery clogging animal fat, this mixture is rich in Omega 3.

Black Bottom Banana Cream Pie

This pie is wonderful. Two recommendations are 1) not to overload the top with the whipped topping and; 2) when making the cream custard, use banana flavored soy milk instead of regular milk.

Chicken, Bacon, and White Bean Soup: Portuguese-style

White beans, bacon, shallots and garlic, topped with a pungent cow\goat\sheep mixed cheese; add tremendous flavor to this Portuguese-style chicken soup. It's a hearty meal in a bowl. Plan ahead to soak the beans overnight and make fresh chicken broth.

Chocolate Brownies

This is an easy and delicious recipe. I prefer using the flaxseed substitute for eggs. (The flaxseed egg substitute is included in the banana bread recipe.)

The recipe is in both English and Portuguese.

Ginger Snaps

This cookie gets its chewy texture and spicy flavor from adding brown sugar, molasses, and spices to the batter. There are differences of opinion as to how 'spicy' a gingersnap should be and for that reason here's how to adjust the batter to suit your own individual taste. One way to increase spiciness is to add, along with the other spices, a 1/4 teaspoon of white or black ground pepper or a 1/4 cup of diced crystallized ginger. Another idea is to add a little more molasses to the batter or use 'dark' molasses instead of 'light'.

Fresh Peach Pie

This is a simple, quick, old fashioned, baked, two crust peach pie made with fresh peaches and simple ingredients.

Meatless Meatloaf

Even meat lovers enjoy this vegetarian meatloaf. Walnuts, tofu, fresh bay leaves and old fashioned ketchup are key ingredients that give this entree a meaty and traditional flavor.

Hot Cross Buns

Oatmeal Cookies

These classic American cookies come out of the oven crispy on the outside and tender in the middle. Freezing them can preserve the crispiness. Even if they stay out at room temperature these are a delightful taste treat.

I sometimes add date pieces and nuts to the recipe.

Prune Cake

This recipe is from the Southern USA. It's sweet and moist without being too unhealthy. My changes to the original recipe are listed in parentheses.

Pumpkin Maple Muffins

Mildly sweet and just a bit chewy, these pumpkin muffins are terrific.

Pumpkin Pie

This recipe comes with a bit of history regarding pumpkin pie. I adapted it from a recipe I found on the joyofbaking.com web site.

I make my own pumpkin puree and recently I was a half-cup short of what I needed, so I cooked a half cup of corn meal to roughly the same consistency as the pumpkin and used that. The result was delicious and the finished consistency perfect. The photo shown here is of that successful experiment.

Pumpkin Pie Cake

I formulated this recipe from parts of several I reviewed on the web, and then I added my own touches. I've made it several times, and it sure does come out deliciously!

Rum (or Bourbon) Balls

These balls are quick and easy to make. Make these a few days before you serve them as they mellow and the sharp alcohol taste blends in more with the other ingredients. Store in a tin with a tight lid. In Portugal I can't find the Vanilla wafers so I use coconut wafers. I store them in the freezer - they don't go hard and they are so good ice cold.

Sweet Potato Biscuits

From the Southern United States.... Maple butter frosting makes them into a delicious treat. I use about 1 cup of wheat flour instead of all white flour. Also, my mashed sweet potatoes are usually on the moist side, so I do not add the milk that is called for in this recipe.

Turkey & Stuffing with Gravy

This is the Thanksgiving feast my mom makes, and it's absolutely delicious. The holiday just isn't the same without the taste of Mom's stuffing.

Traditional Holiday Eggnog

The American tradition of serving eggnog between Christmas and the New Year, traces back to George Washington. Though it’s served cool or at room temperature, its thick, creamy texture and kick of alcohol warms the body and spirit. I've adapted and modified several formulas to develop this recipe. Enjoy!
